sheet-pan chicken & potatoes

Ingredients:

  • 1 lb chicken thighs or drumsticks
  • 3-4 medium potatoes, diced
  • 1-2 carrots, sliced (fresh or frozen)
  • 2 Tablespoons oil
  • 1 teaspoon garlic powder (or 1 clove garlic, minced)
  • 1 teaspoon paprika
  • Salt & pepper
  • Optional: dried parsley, lemon juice, or any seasoning blends you have on hand

Instructions:

  1. Preheat oven to 425ºF
  2. Line a baking sheet with foil for easy cleanup.
  3. Place diced potatoes and carrots on sheet pan. Drizzle with 1 Tablespoon oil and half the seasonings. Toss to coat.
  4. In a small bowl, toss the chicken pieces with remaining oil and spices.
  5. Add the chicken to the sheet pan, nestling pieces in between the potatoes.
  6. Bake 35-45 minutes, flipping potatoes halfway, until:
    1. Chicken reaches 165°F internal temp
    2. Potatoes are golden and tender
  7. Add a squeeze of lemon or sprinkle of parsley if available.
