sheet-pan chicken & potatoes

Ingredients:
- 1 lb chicken thighs or drumsticks
- 3-4 medium potatoes, diced
- 1-2 carrots, sliced (fresh or frozen)
- 2 Tablespoons oil
- 1 teaspoon garlic powder (or 1 clove garlic, minced)
- 1 teaspoon paprika
- Salt & pepper
- Optional: dried parsley, lemon juice, or any seasoning blends you have on hand
Instructions:
- Preheat oven to 425ºF
- Line a baking sheet with foil for easy cleanup.
- Place diced potatoes and carrots on sheet pan. Drizzle with 1 Tablespoon oil and half the seasonings. Toss to coat.
- In a small bowl, toss the chicken pieces with remaining oil and spices.
- Add the chicken to the sheet pan, nestling pieces in between the potatoes.
- Bake 35-45 minutes, flipping potatoes halfway, until:
- Chicken reaches 165°F internal temp
- Potatoes are golden and tender
- Add a squeeze of lemon or sprinkle of parsley if available.
