rainbow veggie wraps (Pride Month edition)

This wrap celebrates Pride Month by highlighting the beauty of diversity. Each color brings something unique. Together, they make something vibrant, nourishing, and strong.
Ingredients
- Red: ½ cup shredded red cabbage or diced tomatoes
- Orange: 1 carrot, shredded or match-sticked
- Yellow: ½ yellow bell pepper, thinly sliced (or corn if bell peppers are expensive)
- Green: 1 cup spinach or shredded lettuce
- Purple/Blue: ½ cup purple cabbage or sliced red onion
- Wrap base: 4 whole-wheat tortillas
- Simple spread: ½ cup hummus (store-bought or homemade)
Tip: Bagged coleslaw mix can be an easy alternative instead of buying all separate veggies!
Optional add-ins (still budget-friendly):
- Canned black beans (rinsed)
- Cucumber slices
- Avocado (if available)
How to make
- Lay tortillas flat.
- Spread 2–3 tablespoons hummus on each wrap.
- Layer vegetables in rainbow order across the center of each tortilla.
- Roll tightly like a burrito.
- Serve wraps whole, halved, or sliced into pinwheels for events.
