quinoa and black bean burgers

These quinoa and black bean burgers are packed with fiber, plant protein, and antioxidants, which all play a role in cancer prevention. They’re also easy to make and full of flavor!

Ingredients:

  • 1 1/2 cups cooked quinoa (about 1/2 cup uncooked)
  • 1 can black beans, rinsed and drained
  • 1 chipotle pepper (or 1 tsp chipotle powder or smoked paprika for ease)
  • 1/2 tsp each: garlic powder, onion powder, chili powder, cumin
  • 1 egg
  • 3/4 tsp salt
  • 1/4 cup regular breadcrumbs

Instructions:

  1. Mix: Combine all ingredients in a bowl or pulse in a food processor until mostly smooth but still textured.
  2. Form: Shape into 4 patties.
  3. Cook:
    • Stovetop: Cook in a lightly oiled pan over medium heat for ~4–5 minutes per side.
    • Oven: Bake at 375°F (190°C) for 25 to 30 minutes, flipping halfway.

Serving Suggestions:

  • On a bun or toasted bread
  • Add mayo mixed with a little hot sauce
  • Top with sliced tomato, and shredded lettuce or spinach
  • Add pickled onions (easy to make with vinegar, sugar, and red onion)
