quinoa and black bean burgers
These quinoa and black bean burgers are packed with fiber, plant protein, and antioxidants, which all play a role in cancer prevention. They’re also easy to make and full of flavor!
Ingredients:
- 1 1/2 cups cooked quinoa (about 1/2 cup uncooked)
- 1 can black beans, rinsed and drained
- 1 chipotle pepper (or 1 tsp chipotle powder or smoked paprika for ease)
- 1/2 tsp each: garlic powder, onion powder, chili powder, cumin
- 1 egg
- 3/4 tsp salt
- 1/4 cup regular breadcrumbs
Instructions:
- Mix: Combine all ingredients in a bowl or pulse in a food processor until mostly smooth but still textured.
- Form: Shape into 4 patties.
- Cook:
- Stovetop: Cook in a lightly oiled pan over medium heat for ~4–5 minutes per side.
- Oven: Bake at 375°F (190°C) for 25 to 30 minutes, flipping halfway.
Serving Suggestions:
- On a bun or toasted bread
- Add mayo mixed with a little hot sauce
- Top with sliced tomato, and shredded lettuce or spinach
- Add pickled onions (easy to make with vinegar, sugar, and red onion)
