one-pot tomato basil pasta

Ingredients:

  • 12 oz pasta (any shape)
  • 1 can (14-15 oz) diced tomatoes
  • 1 small onion, diced
  • 2-3 cloves garlic, minced (1 1 tsp garlic powder)
  • 1 packet frozen spinach, thawed and drained
  • 3 cups water or broth
  • 1 Tablespoon oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
    • Or can swap basil and oregano for 2 tsp Italian seasoning blend
  • Salt & pepper
  • Optional: sprinkle with parmesan or mozzarella cheese when serving

Instructions:

  1. Add everything to one large pot:
    • Pasta, canned tomatoes (with juices), water/broth, spinach, onion, garlic, seasonings.
  2. Bring to boil over high heat.
  3. Reduce to medium heat and cook, stirring occasionally, for 10-12 minutes, until:
    • Pasta is cooked
    • Most of the liquid has reduced into a light sauce
  4. Taste and adjust seasoning.
