one-pot tomato basil pasta

Ingredients:
- 12 oz pasta (any shape)
- 1 can (14-15 oz) diced tomatoes
- 1 small onion, diced
- 2-3 cloves garlic, minced (1 1 tsp garlic powder)
- 1 packet frozen spinach, thawed and drained
- 3 cups water or broth
- 1 Tablespoon oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Or can swap basil and oregano for 2 tsp Italian seasoning blend
- Salt & pepper
- Optional: sprinkle with parmesan or mozzarella cheese when serving
Instructions:
- Add everything to one large pot:
- Pasta, canned tomatoes (with juices), water/broth, spinach, onion, garlic, seasonings.
- Bring to boil over high heat.
- Reduce to medium heat and cook, stirring occasionally, for 10-12 minutes, until:
- Pasta is cooked
- Most of the liquid has reduced into a light sauce
- Taste and adjust seasoning.
