one-pot cheesy rice & bean skillet

Ingredients:
- 1 cup white rice (uncooked)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 2 cups water or broth
- *use bouillon cube as cheaper option than broth
- 1 cup shredded cheese (any kind!)
- 1 Tablespoon oil
- 1 teaspoon garlic powder (or 1 clove garlic, minced)
- 1 teaspoon chili powder (optional)
- Salt & Pepper
- Squeeze of lime or splash of vinegar (optional, brightens flavor)
Instructions
- Heat oil in large pot or deep skillet on medium heat.
- Add uncooked rice, stirring or 1-2 minutes until lightly toasted.
- Add water/broth, garlic, chili powder, salt, and pepper. Stir to combine.
- Bring to a boil, then reduce heat to low. Cover and cook 15 minutes.
- Remove the lid. Add the beans and frozen vegetables. Stir and cover again, cooking for 5 more minutes or until heated through.
- Turn off heat and stir in shredded cheese until melted and creamy.
- Taste and adjust seasoning. Add a squeeze of lime and splash of vinegar if desired.
