one-pot cheesy rice & bean skillet

Ingredients:

  • 1 cup white rice (uncooked)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 cups water or broth
    • *use bouillon cube as cheaper option than broth
  • 1 cup shredded cheese (any kind!)
  • 1 Tablespoon oil
  • 1 teaspoon garlic powder (or 1 clove garlic, minced)
  • 1 teaspoon chili powder (optional)
  • Salt & Pepper
  • Squeeze of lime or splash of vinegar (optional, brightens flavor)

Instructions

  1. Heat oil in large pot or deep skillet on medium heat.
  2. Add uncooked rice, stirring or 1-2 minutes until lightly toasted.
  3. Add water/broth, garlic, chili powder, salt, and pepper. Stir to combine.
  4. Bring to a boil, then reduce heat to low. Cover and cook 15 minutes.
  5. Remove the lid. Add the beans and frozen vegetables. Stir and cover again, cooking for 5 more minutes or until heated through.
  6. Turn off heat and stir in shredded cheese until melted and creamy.
  7. Taste and adjust seasoning. Add a squeeze of lime and splash of vinegar if desired.
