nopales con huevo (cactus & egg scramble) with beans and tortilla

Ready in 20 minutes | Serves 4

This flavorful egg scramble brings together simple ingredients for a nourishing meal.

Ingredients:

  • 1 tbsp vegetable oil
  • 1 cup nopales, cleaned and chopped (fresh or jarred, rinsed if salted)
  • 1 small onion, chopped
  • 1 medium tomato, chopped
  • 4 eggs
  • 1 can low-sodium pinto or black beans, rinsed
  • 4 small corn tortillas
  • Salt and pepper to taste

Instructions:

  • In a skillet, heat oil over medium heat. Add onion and cook until soft.
  • Add nopales and tomato. Cook for 5–7 minutes until nopales are tender and less slimy.
  • Crack in eggs and scramble with the vegetables. Cook until eggs are done.
  • In a separate pot, heat beans until warm.
  • Warm tortillas on a dry pan or microwave.

Diabetes plate breakdown:

  • ½ plate: Nopales, tomato, onion (non-starchy veggies)
  • ¼ plate: Eggs (protein)
  • ¼ plate: 1 corn tortilla + ¼ cup beans (carbs)
