nopales con huevo (cactus & egg scramble) with beans and tortilla

This flavorful egg scramble brings together simple ingredients for a nourishing meal.
Ingredients:
- 1 tbsp vegetable oil
- 1 cup nopales, cleaned and chopped (fresh or jarred, rinsed if salted)
- 1 small onion, chopped
- 1 medium tomato, chopped
- 4 eggs
- 1 can low-sodium pinto or black beans, rinsed
- 4 small corn tortillas
- Salt and pepper to taste
Instructions:
- In a skillet, heat oil over medium heat. Add onion and cook until soft.
- Add nopales and tomato. Cook for 5–7 minutes until nopales are tender and less slimy.
- Crack in eggs and scramble with the vegetables. Cook until eggs are done.
- In a separate pot, heat beans until warm.
- Warm tortillas on a dry pan or microwave.
