no bake rainbow yogurt bark

This dessert celebrates every color of the rainbow. It’s as fun to make as it is to eat!

Ingredients:

  • 2 cups plain or vanilla Greek yogurt
  • 2–3 Tbsp honey or maple syrup (optional, to taste)

Rainbow toppings (mix and match):

  • Red: strawberries or raspberries
  • Orange: mandarin orange segments or mango
  • Yellow: pineapple or banana slices
  • Green: kiwi or green grapes
  • Blue: blueberries
  • Purple: blackberries or purple grapes
    • Optional extras:
      • Unsweetened shredded coconut
      • Chopped nuts or granola
      • Mini chocolate chips or sprinkles

How to make:

  1. Line a baking sheet with parchment paper.
  2. Stir yogurt and sweetener together, then spread evenly (about ¼–½ inch thick).
  3. Arrange fruit on top in rainbow order—or however feels joyful and fun!
  4. Add optional toppings if desired.
  5. Freeze for 2–3 hours until firm.
  6. Break into pieces and enjoy straight from the freezer.
