microwave veggie fried rice

This veggie fried rice comes together with just a few ingredients and a microwave. It’s a great choice for days when you’re not up for cooking or need a quick meal.

Ingredients:

  • 1 cup cooked rice (leftover or microwaveable packet)
  • 1 cup pre-cut frozen mixed vegetables
  • 1 egg (optional for protein)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil or olive oil

Instructions:

  • In a microwave-safe bowl, add the frozen veggies and microwave for 1 to 2 minutes until heated.
  • Add the rice to the bowl and stir to combine. Microwave for another 1 to 2 minutes.
  • If using an egg: crack it into the bowl, stir well, and microwave for 30 seconds at a time, stirring in between, until fully cooked.
  • Stir in soy sauce and oil. Mix well and microwave for 30 more seconds.
  • Let cool slightly and enjoy!
