lime & cilantro tuna salad on whole grain toast

Canned light tuna is considered a lower mercury option and is generally safe during pregnancy when eaten in moderation (up to twice per week). Light tuna is also high in DHA and Choline. These nutrients can be under-consumed during pregnancy and are important for baby’s brain development.

Ingredients:

  • 1 can (5 oz) canned light tuna, drained
  • 2 tablespoons plain Greek yogurt (or mayo, if preferred)
  • 1 tablespoon fresh lime juice
  • 1–2 tablespoons chopped fresh cilantro
  • 1 tablespoon finely diced red onion or celery (optional)
  • ¼ teaspoon iodized salt
  • Pinch black pepper
  • 2 slices wholegrain bread, toasted

Instructions:

  1. In a bowl, flake tuna with a fork.
  2. Stir in yogurt (or mayo), lime juice, cilantro, onion/celery, salt, and pepper.
  3. Taste and adjust lime or salt as needed.
  4. Spoon onto toasted wholegrain bread and serve.
