country veggie hash (kidney-friendly)

Serves: 2–3 | Prep Time: 10 min | Cook Time: 15 min

This skillet meal features potatoes, your choice of cabbage or spinach, and peppers, topped with an optional egg for protein.

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 medium potato, peeled and diced (boiled first to reduce potassium)
  • 1/2 cup chopped green cabbage or spinach
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper (any color)
  • 1 egg (optional, for added protein)
  • Black pepper or dried herbs (like thyme or oregano) for flavor

Instructions:

  1. Boil the diced potato for 5–7 minutes, then drain to lower potassium.
  2. Heat oil in a skillet over medium heat.
  3. Add onion and bell pepper. Cook for 2–3 minutes.
  4. Add cabbage/spinach and boiled potatoes. Stir and cook until lightly browned.
  5. If using an egg, crack it into the pan and stir until cooked through.
  6. Season with black pepper or herbs. Serve warm.
