country veggie hash (kidney-friendly)
Serves: 2–3 | Prep Time: 10 min | Cook Time: 15 min
This skillet meal features potatoes, your choice of cabbage or spinach, and peppers, topped with an optional egg for protein.
Ingredients:
- 1 tablespoon vegetable oil
- 1 medium potato, peeled and diced (boiled first to reduce potassium)
- 1/2 cup chopped green cabbage or spinach
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper (any color)
- 1 egg (optional, for added protein)
- Black pepper or dried herbs (like thyme or oregano) for flavor
Instructions:
- Boil the diced potato for 5–7 minutes, then drain to lower potassium.
- Heat oil in a skillet over medium heat.
- Add onion and bell pepper. Cook for 2–3 minutes.
- Add cabbage/spinach and boiled potatoes. Stir and cook until lightly browned.
- If using an egg, crack it into the pan and stir until cooked through.
- Season with black pepper or herbs. Serve warm.
Nutrition highlights:
- This meal is low in sodium, moderate in potassium (thanks to boiling), and easy to adjust for protein needs.
- You can swap in other local veggies or skip the egg for a plant-based version.
