country-style chicken & veggie skillet
Ready in 30 minutes | Serves 4
Tender chicken is simmered with veggies and herbs for a quick weeknight dinner.
Ingredients:
- 1 lb skinless chicken thighs or drumsticks (bone-in or boneless)
- 1 tbsp vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 1 medium zucchini or yellow squash, chopped
- 1 medium potato, diced (optional for heartier meal)
- 1 can (14.5 oz) no-salt-added diced tomatoes
- 1/2 tsp black pepper
- 1/2 tsp dried thyme or oregano
- 1/4 tsp salt (optional)
- 1/2 cup water or low-sodium broth
Instructions:
- Heat oil in a large skillet over medium heat. Add chicken and brown on both sides (about 5–7 minutes). Remove and set aside.
- In the same skillet, sauté onion and garlic until soft.
- Add carrots, zucchini, and potatoes. Stir in tomatoes, water/broth, and seasonings.
- Return chicken to the skillet. Cover and simmer for 20–25 minutes, until chicken is cooked through and vegetables are tender.
- Simmer for 10–15 minutes to blend flavors.
- Top with cilantro and a squeeze of lime before serving.
