country-style chicken & veggie skillet

Ready in 30 minutes | Serves 4

Tender chicken is simmered with veggies and herbs for a quick weeknight dinner.

Ingredients:

  • 1 lb skinless chicken thighs or drumsticks (bone-in or boneless)
  • 1 tbsp vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 1 medium zucchini or yellow squash, chopped
  • 1 medium potato, diced (optional for heartier meal)
  • 1 can (14.5 oz) no-salt-added diced tomatoes
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme or oregano
  • 1/4 tsp salt (optional)
  • 1/2 cup water or low-sodium broth

Instructions:

  1. Heat oil in a large skillet over medium heat. Add chicken and brown on both sides (about 5–7 minutes). Remove and set aside.
  2. In the same skillet, sauté onion and garlic until soft.
  3. Add carrots, zucchini, and potatoes. Stir in tomatoes, water/broth, and seasonings.
  4. Return chicken to the skillet. Cover and simmer for 20–25 minutes, until chicken is cooked through and vegetables are tender.
  5. Simmer for 10–15 minutes to blend flavors.
  6. Top with cilantro and a squeeze of lime before serving.

Serving suggestions:
Serve hot with a side of brown rice or whole grain bread, if desired.
